My Rosh Hashanah Apple Honey Cake Recipe

I made my Apple Cake with Honey Glaze for my friends, the Anne and Michael Levines for Rosh Hashanah this year and as I got very favorable notices on it I am putting it out there for you all to enjoy. Use a brush to distribute the glaze as it will make for a soggy cake if the glaze "settles".

Apple Cake with Honey Glaze
Makes 1 9-inch cake (can be doubled with excellent results)

Ingredients:
1 egg
1 cup, minus 2 Tablespoons, sugar
1 heaping teaspoon cinnamon
1/4 cup flavorless vegetable oil
3 medium Gala or Fuji or Honey Crisp apples
1 cup flour
1 teaspoon baking powder

For glaze:
2 tablespoons unsalted butter
2 tablespoons honey

Directions:
Preheat oven to 350°. In a large bowl, mix the eggs, sugar, cinnamon and oil. Peel and slice the apples and add to mixture in bowl (coating as you go to keep apples from turning brown.) Mix together the baking powder and flour and add to the ingredients in the bowl. Mix well (best with a fork) until all of the flour is absorbed by the wet ingredients. Pour mixture into a greased one 9″ round pans, lined with parchment. Bake for approximately 55 minutes. Let cool 10 minutes in pan and unmold onto rack. Using another rack flip cake back so the top of the cake is "up".
Once unmolded, place butter and honey in microwave and microwave on medium until melted and using pastry brush glaze cake with honey butter mixture.
Let cool and serve at room temperature.
